How is sparkling sake made?

You are probably familiar with normal, flat sake. But did you know that all sake starts life with bubbles? The combination of yeast and sugar releases carbon dioxide. These excited little bubbles usually escape into the air, never to be seen again. But crafty sake breweries created three ways to capture the bubbles for lovely, bubbly sake!:


• CO2 Injection – Adding extra carbon dioxide to the bubbly mix.


• Tank fermentation – Keeping the tank at a low temperature but with high pressure to retain the bubbles in the sake.


• Bottle fermentation – Adding active yeast to sake while in the bottle. This creates a cloudy sake.

This Dassai Sparkling Nigori is made with the bottle fermentation method. This gives the sake a misty appearance and retains a high alcohol content at 16%. But be warned! It has crazy air pressure. Open with care or risk losing your face.

Appearance – Misty – as you would expect from a nigori sake.

Nose – Peach, a little tart pear and slight hint of almond milk.

Palate – Creamy yoghurt, sweet, ripe peach and fresh green grapes. Short finish.
